Our Process

We craft our crackers using an active sourdough starter and wholesome ingredients, allowing the dough to ferment naturally and develop its signature tang. Before baking, we blend aromatic za’atar directly into the dough, infusing each cracker with the earthy notes of wild thyme, sesame, and sumac. After a slow rest, the dough is rolled thin and baked until crisp and golden. Made in small batches to ensure freshness, every bite offers a light, tangy crunch with the unmistakable flavor of za’atar — a wholesome, savory snack that pairs perfectly with our broths or stands deliciously on its own.
